Just what I was looking for!
I am glad I found this book. I wanted to find a book that would be a good fit for me and my kids and that's just what I did. My kids have loved the recipes that we have tried so far and so have I. We are not vegetarians, but thanks to this book we have added a lot more veggie dishes to our menu and have been re-introduced to vegetables that we thought we wouldn't ever try again.. There's a wide variety of recipes that I would have not thought to make unless I opened this book. You won't be disappointed!

Ridiculously high sodium counts
We've recently gone vegetarian and at the same time, I am cutting calories for my own diet. Often vegetarian cookbooks provide fairly healthy and -- with the exception of pasta heavy meals -- lower calorie meals. I am a bit disappointed in this. Many of the recipes have 600 calories per serving and the sodium counts were crazy high. Many nearing or above 1,000 mg. of sodium per serving. That's half the RDA for the day! And, many of the recipes used canned soups, which pushed some of them well over that 1,000 mg of sodium, and quite frankly, defeats the purpose of embracing a healthier vegetarian diet. That said, I will try the few that my kids will eat, have lower sodium counts and lower calorie counts. There are a few in here that look promising. However, I'm glad that I didn't not buy this new, but purchased used from an amazon seller for just a few dollars. A better resource that I have come across is the Crock-Pot Vegetarian cookbook.

Excited
Better homes and garden never disappoints. Read through the book the first day. Excited to try these recipes they are new to me and that is what I was hoping for. They are ingredients I'm familiar with and feel I will enjoy eating.

... the recipes I have tried are just down right horrible
Too many crazy recipes I couldn't find some of the items to use because I don't live in a bid city and some of the recipes I have tried are just down right horrible

LOTS of mushrooms
I love mushrooms, so I love this book, since there seems to be a lot of recipes with mushrooms. If you don't like mushrooms though, there probably isn't a whole lot you would eat.

Great book to get started on vegetarian meals!
My husband and I are trying out a vegetarian lifestyle, but I have very few recipes in my head to make quick meals. When I get home, I want to be able to throw something together quickly. This book was a great start to learning and remembering great meals. I combined some and added salad to others. Each recipe yielded a great meal. My daughter even enjoyed them without asking for the meat! The pictures were fantastic and give you the idea of what each dish should look like. Very appetizing.

hard to read
The recipe's are hard to read due to the color of the page (light green page and "hint's" are in a light white print).

Very good!
I should say I don't use the book every day, but a couple times a week definitely! Especially when my husband and I want to try smth new and unpredictable. Helped me a lot in surprising him also! Highly recommended!A little notice: the first part of the book has a lot of breakfast recipes, however, almost all of them are coming with eggs (which we don't eat).
